To be declared a “craft” spirit, the distillery must ferment its own base alcohol and use only raw agricultural material grown in the province. While American whiskey is distilled from a mashbill (for example, Jack Daniel’s mostly follows 80% corn, 8% rye and 12% malted barley), Canadian whisky is fermented, distilled and matured separately…then blended to make the final product. It ensures that you’re picking the best quality spirit to make the finished product — you’re checking the barrels for quality and exploring what you can do at the blending stage. Keep an eye out for their aged expressions, including a 10-year-old single malt aged in barrels smoked with driftwood for a salty, iodine twang. Canadian whiskies don’t require mash bills or age statements on their labels — they are only required to have a minimum age of three years in barrel.

President Alberto Fernández and Prime Minister Justin Trudeau recently renewed their acquaintance at the G7 summit in Bavaria. Sirrs highlighted the bilateral relations and common values between the two countries in keeping with the event’s title: “Over 80 years of friendship” (it should be borne in mind that Canada did not gain full control of its foreign affairs until the Statute of Westminster in 1931). The common ground ranged from defence of human rights and gender equality to both countries participating in the Qatar World Cup at the end of the year.

Without affordable energy, an advanced economy “will not stay advanced for long”. “That will be an important decision,” writes David Frost, the former government Brexit negotiator, in The Telegraph, “but it is only part of the picture.” There is nothing “more vital” to our economy than “copious supplies of energy”, but “neither we nor the EU have an energy policy that can actually deliver it”. We need a “rethink”, he says. “We were two of likely more people trying to navigate an education system that was built by and for straight, white, cis people.” To them, The Wasp Factory by Iain Banks – which details a character on hormone replacement drugs killing animals and children – “was a fascinating intellectual conversation starter about masculinity. Activism is demanded.” This writer thinks “Yale and Harvard have come to resemble the mythical Ouroboros, eating their own tails to satisfy an insatiable appetite for conformity”. And while “it’s clear these institutions are still in high demand”, that “doesn’t mean they are fulfilling their function”. If universities in the past “made promises to teach their undergraduates how to think, they now aim to teach them what to think”. Hirsi Ali recently taught classes at the new University of Austin, and these students – “many… hailed from established institutions” – were “hungry for knowledge”. But it became apparent “that the elite educational institutions are doing the next generation a fundamental disservice”. We need to “found new universities”, she says. Jennifer Cole requires some “soul searching” to celebrate Canada Day. Writing in the Toronto Star, she explains that her maternal ancestors came from England and Ireland to start a life on First Nations territory in New Brunswick. The holiday is “a poignant reminder of our harmful colonial past, and crimes against humanity not so long ago”. That “cannot be denied” after the discovery of unmarked graves of multiple residential schools of First Nations children, she says. Some of the organizers of the “Freedom Convoy” blockade and the following “Rolling Thunder” protests this spring have vowed to return to the capital on Friday, with police and the public bracing for the possibility of those protesters staying through the weekend. Not all cities will be returning to staging major events, however. Cities are also bracing for protests — particularly Ottawa, where residents continue to grapple with what police have acknowledged is “lingering trauma” from the convoy blockade earlier this year.

After two years of mostly virtual celebrations to mark Canada Day, in-person festivities are back across the Greater Toronto Area.

The TTC will be operating on a holiday schedule for Canada Day while GO Transit will be adhering to its Saturday schedule. The city’s main Canada Day celebrations are planned for both Mel Lastman Square in North York and Thompson Memorial Park in Scarborough. The festivities at Mel Lastman Square run from 2 p.m. until 10 p.m. and will include live music, dance performances, family-friendly activities and food vendors. The celebration at Thomson Memorial Park runs from 10 a.m. to 3 p.m. and activities include a pancake breakfast, a sound stage with a DJ, bouncy castles and face painting. The TTC will, however, be increasing service on the 22 Coxwell, 92 Woodbine South and 501 Queen routes to accommodate those travelling to and from Ashbridges Bay Park for the Canada Day fireworks display. The city’s StrollTO program offers free self-guided walking itineraries in more than 140 neighbourhoods across the city. “I can tell you that the police have learned from those kinds of experiences,” Mayor John Tory said of the Victoria Day weekend violence during an interview with CP24 this week. I think certainly the chief has my full support in making sure that anybody who's engaged in that kind of act is brought to justice and dealt with because it is just not something that is acceptable in a city like this or anywhere.” Here is the full list of closures. it is unclear if this will have an impact on the Canada Day fireworks.
